Monte Cristo Sandwich

1 cup egg substitute (or 3 whole eggs and 2 egg whites)
1/3 cup 1% milk
Salt and Pepper to taste
8 slices (1 oz.) lean deli turkey breast
8 slices (1 oz.) lean deli ham
4 slices (1 1/2 oz.) low-fat Swiss cheese
8 slices Texas toast bread
Powdered sugar, optional
Butter-flavored cooking spray

--Dijon Red Currant Sauce--
1/3 cup red currant jelly
2 tablespoons Dijon mustard
2 tablespoons fresh orange juice


Combine egg substitute, milk sald and pepper in a shallow dish; wisk together. Place 1 slice of each of turkey and ham and 1 slice of cheese on each of four bread slices. Top with remaining bread. Dip both side of each sandwich into egg mixture. Place sandwiches in a large nonstick skillet coated with butter-flavored cooking spray over medium-high heat. Reduce heat to medium; cook for 2-3 minutes on each side or until golden brown. Sprinkle with powdered sugar. Serve with favorite jelly and reduced-fat cream cheese or Dijon-Red Currant Sauce. For the Dijon-Red Currant Sauce, wisk all ingredients in a small bowl.
